Before refrigeration, before chemicals and cans, there was fermentation. A living, bubbling collaboration between people, time and microbes that allowed cultures across the world to carry the abundance of one season into the scarcity of the next.

At Meld Labs, we work with live cultures to preserve food, to unlock its complex, edgy flavours while enhancing nutrition and reducing waste. Fermentation pre-digests food, makes nutrients more available and can neutralise anti-nutrients.

Our preservation programme is a conduit between farm and future. Ingredients arrive from our farmer partners across the country and move through cycles of salt, time, temperature and care. What might otherwise be surplus is upcycled into something entirely new and alive.
